Grape harvest: Grapes were hand
picked and subject to rigorous selection. The Merlot grapes
were harvested in the middle of September and the Cabernet
Sauvignon at the end of the month. Grapes were constantly
checked for maturity to determine the optimum time for the
harvest.
Production: The blend was made
using the Merlot and Cabernet Sauvingon varieties with fermentation
and maceration lasting 16 to 19 days respectively in stainless-steel
tanks. This was followed by ageing in French Allier oak barrels
for 18 months. The wine was then finished in the bottle for
10 months.
