The
winery is in the middle of a property called Casa Ravella
in the village of Ordal (in the Subirats area). The village
is 325m above sea level and surrounded by vineyards which
is the typical landscape in the region.
Some 85% of the grapes are used to produce cava (sparkling
wine) which we sell either as grapes, must or wine to the
most important cava producers in the area.
The remainder of the vineyard is cultivated in a different
way to produce still wines with production being carefully
controlled. With short pruning and the removal of bunches
when the grapes start to mature, production is kept below
5,000-6,000 kg / hectare of red varieties and 8,000 kg / hectare
of white varieties. Vines ranging from 20 to 40 years old
are used for wine making. The cellar has 45 French-oak and
American-oak barrels. |
